Recently, China’s real estate giant Country Garden opened the “FOODOM Robotics Restaurant Complex” in Shunde. How does a robot chef cook food? Let's have a look!
The robot restaurant is set up by the subsidiary Qianxi Robot Catering Group (Qianxi Group) .The 2,000-square-meter restaurant offers many types of food, including fast food, hotpot, Chinese food, snacks, desserts, drinks and etc. Robotic elements can be seen everywhere in the restaurant.
More than 20 cooking robots in different food zones
Entering the restaurant, you will first spot the snack and dessert zones, operated respectively by two robot “chefs”. The frying robot in the snack zone modulates the oil temperature for different food preparation. After placing an order, customer can get hot snacks within 40-70 seconds.
During the epidemic outbreak, the clay-pot robots developed by Country Garden were sent to Hubei province to cook for the medical staff, thus becoming nationally well-known. The robot “chef” in the Clay-pot area can make 100-120 bowls of clay-pot rice every hour.
The fast food zone is similar to the university canteen, but there is no assistant here. The machine will transport food to the steamer. Customers can go to the payment area after selecting the food, and payment machine can automatically identify the food and generate dining charges.
In the 2000-square-meter restaurant, over 20 kinds of robots including claypot robots, stir-frying robots and noodle robots are “on duty”, bringing high-tech dining experience to nearly 600 people simultaneously.
Food from the sky: 850 plates of food “landed” on customers’ tables per hour
In the hot pot area, we can see how food is conveyed “from the sky”. Looking up, we will find a skyrail system delivering food directly to the customers’ table.Up to 850 plates are conveyed via this system per hour, with each skyrail track serving guests of 12 tables at the same time.
At the same time, the auxiliary catering robots on the ground are busy delivering food to the dining tables. What the diners need to do is to press the button and get their dishes.
Secret of delicious delicacy: Shunde chefs as robot “tutors”
The Robot Restaurant asked the Chinese Culinary Master Mr. Lin Chaodai, also director of the International Master Chef Association of Chinese Food and to organize a group of chefs to “teach and train” the robots. Menus are developed through a lengthy trial-and-error process.
For a simple-looking dish like chicken broth cabbage, the frying temperature, frying time, the number of times it should be flipped — all of these variables need to be adjusted over the course of more than a thousand attempts.Finally, chefs selected the most delicious ones from hundreds of robot-made dishes and programmed these accurate recipes into their memory. In this way, the robot apprentices “learned” the most authentic cooking skills from their human master chefs and realized standardized, high-quality, automatic cooking.
